Somehow I completely forgot to post about Owen’s 8 month handprint tile from Paintpots!

We chose a blueish/purple color to mix things up a bit. 🙂 I think it turned out pretty well!

Usually when I make a dish I like to follow some sort of recipe as a guide. I’m not too good with figuring out what favors compliment each other, or what ratios to do, so I like to browse at a few recipes just to get an idea. When I make a new dish, especially if someone else will be eating it too, I want to make sure it’ll taste good.

But last Tuesday I stepped out of my comfort zone and threw stuff in the crockpot that I thought would go well together. We had some pork and not much else, and luckily what I came up with turned out well! It’s a little spicy, a little sweet, a little creamy, and a lot of yummy 😉

Spicy Cranberry Mushroom Pork

1 pound Pork loin
1/4 brown sugar
1 onion, chopped
1 can cream of mushroom soup
1 can jellied cranberry sauce
A few heaping spoonfuls of chili sauce

1. Place the chopped onion evenly on the bottom of the crockpot. Lay the pork on top, and sprinkle the brown sugar evenly on top of the pork and onions.

2. Mix together the cream of mushroom soup (condensed), cranberry sauce, and chili sauce. Pour on top of pork and onions.

3. Cook on high for 6 hours.

This past Sunday I decided to get baptized. I was actually baptized Catholic when I was a baby, but I’ve been doing a lot of thinking about following Jesus and the Bible, and after talking to one of the pastors, Gerald (who is in the picture with me), I had made up my mind. It felt like the right time and the right step to take on my journey with The Lord.

H Mart
There is an Asian market not too far away called H Mart that we went to the other day, and I realized that that was the first time I’ve been there since I was pregnant. Ok, that doesn’t sound too interesting, but we tried going in one time during my pregnancy and I almost threw up because of the fish smell. I literally could not stay in the store. But! I’m not pregnant anymore and the smell doesn’t bother me, so we went! Which means it was officially Owen’s first time there too! They sell all sorts of things there, like specialty items. We like to buy Siracha and chili sauce there because it is SO much cheaper than trying to buy it at Fred Meyers or Safeway. Seriously! A little container at FM or Safeway will be like $5, but a huge tub (pictured) was only like $13 or so. I know I just posted this pic the other day, but Owen looks so cute in it, plus I want to point out how big the tub of chili sauce is compared to him. I think they weigh about the same lol!

Portland Meadows
Last Saturday we went over to Portland Meadows, where they do horse racing. We didn’t see any races, but we did win $7 from a lottery thing they were doing. The grand prize was $500k, and even tho we didn’t win that, we were still happy with the $7 lol 🙂

Sorry for not posting the past couple of days.

To tell you the truth, I have been feeling pretty…down. Really unhappy. There are quite a few reasons – financial, I’m going to have to go back to work soon, and then there’s Dan. Things are really not going well. I’m hoping things will get better, but I don’t see the light yet. It’s hard to be thankful right now, but I just have to keep in mind that there are people out there who are in a worse state than I am. And there are also people who don’t have a cute, sweet little man like Owen in their life. He, alone, can put a smile on my face.

So here goes:
• Owen – no matter how crummy I feel, he is always there with a big smile on his face wanting to play (85% of the time). He is really such a sweet baby and makes my life so much better. He goes with the flow on a lot of things and can be easy to please. Taking care of him and having him rely on me is the best thing in the world. I love being a mom. His mom.

• Obama won!!

When one of Dan’s coworkers found out about Owen, she knitted him a sweater lol! It’s a super nice sweater and even has its own tag. Owen finally got to wear it since it’s getting colder out. 🙂

We were heading to church, that’s why he looks so polished. 🙂

We carved out pumpkins on Halloween night, but cus Owen’s too small to even draw, he got one of the prepainted ones. 🙂

SWCC Photo
We received our photo from SWCC’s Monster Mash a few days ago! It was taken by J. Lucas Photography.

Ok, I really messed up on Owen’s 7 month handprint tile. First of all, the handprint is not the greatest (Owen was really fussy and I was by myself with him). Second, I accidentally reversed where the writing goes so its going to standout from all of the other tiles. And third, as I was comparing them to the other tiles I realized that the paint for tile #6 looks very similar to the paint for this tile. On top of all of that, we left the tile at Paintpots and thought we lost it lol.

But we still got his handprint for month 7, which is all that matters. 🙂

• My brother and some of my friends are on the east coast right now for various reasons and luckily all of them (I think) are doing ok! My brother, Ben, is doing a show in NYC and luckily he still has power and is actually able to walk around outside. He sent me this on Facebook:
“We were stuck inside yesterday so I went through my camera and found that I had these photos.”

I’m so glad that he’s alright!

• I wrote this in an earlier post, but I’m so thankful that Dan took work off early in Thursday because I’m all better now!

• Dan is trying a new thing with Owen every night where he’s trying to teach him how to get off of the couch by himself. Owen has such a fun time even tho he’s not quite grasping the concept lol. His giggles and smiles are so cute and such a great way to end the night. 🙂

• I thought I had lost Owen’s 7 month handprint tile but we accidentally left it at Paintpots lol at least we didn’t lose it!

There are so many inspirations for this smoothie, I’m not sure where to start. All I know is that it’s yummy and I knew that Dan would love it too – and he did!! 😀

Oh, and this makes a warm smoothie. Sounds kinda weird but it’s so good. If you want it cold, add a few ice cubes (about a cup).

Nutty Banana Oatmeal Smoothie

1/3 Cup dry oatmeal, cooked
1 Banana
3/4 Cup plain or vanilla Greek yogurt (or one individual-sized cup)
2 Tablespoons sweetened shredded coconut
2 Tablespoons peanut butter
Milk to liquify everything*

Blend and serve.

* When I’ve used regular yogurt I’ve noticed that I don’t have to add much milk. It also depends on how thick you cook your oatmeal, so just eye it.

When we get vanilla protein powder I want to add a scoop and see how it tastes. It’ll probably be even better! 🙂
